Adulting the PB&J Sandwich
Nut butter toasts for whatever part of you has growed up
I don’t really like dinner. Or I just want to have a smaller meal by the time evening rolls around. Nut butter toasts are one of my go-tos.
At my advanced stage of culinary haute-iness, the standard peanut butter and jelly feels too sticky in my mouth and too heavy in my tummy.
Here are an excess of alternatives. I like almond butter because it’s not so gluey and the taste is sweeter and smokier than peanuts. But feel free to use the nut butters you love.
Almond Butter, Hazelnut, and Miso Toast (and variations)
Ingredients
bread of choice
unsalted, smooth almond butterÂ
white or red miso paste
toasted, chopped hazelnuts
raw honey
Instructions
Toast your bread.
Spread miso on the bread.
Layer with almond butter.
Sprinkle with toasted hazelnuts and drizzle on honey.
Variations
Instead of miso, start with a layer of good quality olive oil and top the sandwich with salt flakes (this is actually my favorite version).
Add thinly sliced apple.
Add slices of good quality sharp English cheddar: the more aged, drier, flaky kind, not the young, dense, mushy American kind.
Use sweet or hot mango chutney instead of or with the honey.
