The "thick paste/cement" comparison made me laugh but also gets at somthing real about texture expectations. I like how this recipe complicates hummus by layering in so many aromatics insted of simplifying it. Most modern cooking trends go the opposite direction, stripping things down to like 3 ingredients. There's soemthing compelling about medieval complexity that forces you to actually pay attention to what's in front of you rather than treating it as background fuel.

It’s definitely fun to make, and the different flavors both blend well and remain surprisingly distinct. I’m also using all organic, freshly ground spices. That gives a huge boost to the attention-magnetizing power of the result.
